Yum! With summer time and BBQ’S rapidly approaching this is a great slow cooker recipe to take to a picnic or pot luck or just make them on the stove top and feed them to your family too! The Maple is the star here it flavors these beans perfectly! Start by soaking your beans overnight or for several hours prior to cooking if you can, soaking your beans first makes them easier to digest and also removes contaminants, just be sure to change your soaking water to clean water before cooking!
Now… onto the recipe
- 1 1/2 cup uncooked black beans
- 1 15 oz can diced no salt added tomatoes
- 1/2 brown onion diced into chunks
- 3 cloves of fresh garlic pressed
- 1/2 tsp sea salt
- 1/3 cup 100% pure maple syrup
- 1/4 tsp black pepper
After you get your soaked beans rinsed and drained and into your new clean water (about 3 to 4 cups) start over medium heat until the beans start to boil and “dance” around a little bit, once your beans are “dancin” reduce heat to med/low and add your canned tomatoes and onions, let cook for about another 30 min. and adjust water level as needed, when the beans start to get a little tender add in your maple syrup and spices and switch to low heat, keep an eye on them and stir them occasionally to make sure they are not getting scorched on the bottom of the pan! It will take a good 2 hours (if not more) to get the beans to the desired finished consistency, If you plan on making these in the crock pot, after soaking beans put all your ingredients in the crock and cook on med or high heat (depending on how fast you want then done) for about 4 hours (takes longer in the slow cooker, hence the name 🙂 ) and there you have it! An easy and nutritious summer crowd pleaser!
