Raw Vegan Dark Chocolate Ice Cream

A little fun for the weekend! This recipe is Oh. So. Simple! You don’t need an ice cream maker but if you happen to have one it will create a creamy smooth non dairy version of this yummy indulgence! Here is what you need and what to do with it:

  • 2 cans of full fat organic coconut milk
  • 1/2 cup raw organic cacao powder
  • 1/2 cup of raw organic agave nectar
  • 1 tsp. of good quality vanilla (I use alcohol free, I like the taste better)
  • 2 tbsp. raw organic cacao nibs (optional)

Pour your 2 cans of coconut milk into your blender, add your cacao powder and agave syrup and vanilla extract and blend until nice and smooth, then pour it into a chilled and ready to go ice cream maker barrel (we keep ours in the freezer at all times, for such occasions!)  turn it on and let it go for about 30 min. while it is churning, add in your 2 tbsp. cacao nibs…. now this is optional, if you like crunchy texture in your ice cream then go for it! other wise leave them out!

After about 30 min. remove the paddle and enjoy it as a soft serve or place it in the freezer for several hours to overnight for a more firm ice cream.

*variation…. If you don’t happen to own an ice cream maker, after all ingredients are whipped up and smooth, pour into a freezer safe bowl and put into your freezer, after about an hour mix in your add ins if you are adding any, mix well and place it back into the freezer for several more hours, until desired firmness is achieved! 

And that is it! How simple it that… serve it up and enjoy!

  • natural marshmallows and walnuts (make your own rocky road!)
