Cha cha cha chia….. Sorry I couldn’t resist, Chia seeds are really cool, and yes they are the same seed you plastered all over your chia pet when you were a kid! Little did we know, however, about the seeds tremendous nutritional value and medicinal properties. For centuries this tiny little seed was used as a staple food by the Indians of the south west and Mexico. Known as the running food, it is a great source of EFA’s or Essential Fatty Acids and soluble fiber, this is what gives it the ability to absorb liquid forming a gel like substance! This recipe is Sooo easy and Sooo nutritious! All throughout spring and summer time we have an abundance of strawberries in our home, the kids love em, especially our youngest, she could easily sit and eat a 1 lb box at one sitting! And sometimes she does! now I made this Jam with strawberries, but you could use any berry, blueberries, blackberries, raspberries etc… Why spend upwards of $4 on a jar of Jam, when making it at home is so easy, and much better for you!
Here is what you do…
depending on the amount you want to make take your strawberries and clean them, stem them and slice them, then place them in your blender or food processor like so
Then add your sweetener, I used about 1 tbsp of xylitol, but you can use any natural sweetener of your choice!
blend it up leaving it nice and chunky, like this
Throw in your chia seeds
mix it all in, put it in a bowl and let it chill for at least 30 min!
the longer it sits the more gel like it will be!
